I love to wake my
family with the smell of a delicious breakfast on Sunday mornings! This
recipe is one of our favorites. Although it uses pumpkin, which most
people use mainly in Autumn, we enjoy this recipe year-round! It calls
for whole wheat flour and agave syrup in place of white flour and sugar,
so it's a healthier, and tastier, alternative to classic waffles!
Pumpkin Pear Waffles
Serves 6
Ingredients
-1 cup whole wheat pastry flour
-1 1/2 tsp baking powder
-1 tsp cinnamon
-1/2 tsp nutmeg
-2 medium eggs, beaten
-2 tsbp agave syrup
-1/2 cup pumpkin puree
-1/4 cup finely diced pear
-olive oil cooking spray
Directions
1. Mix together the flour, baking powder, cinnamon, and nutmeg
2. Beat together the eggs and agave
3. Add in the flour mixture

4. Fold in the pumpkin and pear
5. Pour batter into a hot waffle iron coated with nonstick cooking spray and cook until waffles are crisp and browned
6. Optional-top with maple flavored agave syrup and your favorite toppings such as fresh fruit, almonds and reduced fat whipped topping
