You may not know this about me, but I plan my meals out for 2-3 weeks at a time. I have to do this in order for us to stay on budget while grocery shopping, to keep us from going out to eat, and to stay sane. I thought that I'd share my basic meal plans with you for the next couple of weeks, in case you're needing to jump-start your weekly meal planning.

Of course, sometimes we end up switching days around, and we swap out a veggie or side. I always have fruit or a raw veggie on hand to put out in a bowl, in case Balian (who is two) decided he doesn't want to eat what I've prepared. I try to make adaptations to his dinner plate from the foods I have already made, rather than making him a completely different meal.
This may not work for you, or you may have different tastes (I have picky eaters who won't eat much more than these dishes). These are just suggestions, which help us stay on track with our weekly meals.

This week I am grilling up chicken breasts to use. Tonight we will have grilled chicken, rice, and steamed veggies. Tomorrow we will have grilled chicken sandwiches, fruit, and chips. Wednesday we will have grilled chicken spinach salads. Thursday is a late night for us, so we will just do a frozen pizza. Friday/Saturday we will probably eat out because it is the hubby's birthday!
