Our family loves zucchini and squash, and we've been looking to try some new recipes. I feel like I'm always preparing these veggies the same old way, so I took to Pinterest and found a yummy new side dish recipe to try. If you love squash and zucchini, you'll love this!
What you'll need...
2 medium yellow squash, sliced
2 medium zucchini, sliced
1 medium white or yellow onion, chopped
2 tbsp butter
1/2 cup heavy cream
1/4 cup Parmesan Cheese
1/2 Cup Mozzarella Cheese
Cook the veggies with seasonings and cream for about 8 minutes over medium heat.
Directions...
Pre-heat your oven to 450 degrees.
In a large skillet, melt the butter over medium heat. Stir in chopped onion and cook until translucent in color.
Add sliced squash and zucchini and saute until cooked through. Sprinkle with salt, pepper and Oregano to taste. Add heavy cream and parmesan cheese, stirring occasionally. Cook until bubbly.
Mmm... brown and bubbly!
Add cooked veggie mixture to a baking dish and cover with Mozzarella Cheese. Bake in a 450 degree oven for 14-15 minutes, or until cheese bubbles and begins to brown slightly.
We had ours with panko crusted pork and mashed potatoes!
Serve with your favorite entree and enjoy!
