Tasty Tuesdays: Black Bean & Corn Pressed Wrap

If you're looking for a great, healthy lunch option, give one of my favorite lunches a try! I usually order a wrap very similar to this one at one of my favorite local restaurants, and I did my best to recreate it at home, using what I had in the refrigerator!

Black Bean Pressed Wrap...

You Will Need
1 tortilla wrap (I used spinach)
1 can of black beans
Salsa of choice
Sprinkle of Mozarella Cheese
1/2 tbsp Butter

Spinach wrap

Start with selecting a wrap. I like to use spinach, but you could definitely use sundried tomato, plain, wheat, etc. Anything that sounds good to you is good with me!

Black beans

Heat up one can of black beans in a microwave safe bowl for two or three minutes at high power. Make sure they are warmed through, and then scoop the desired amount (try not to get too much liquid with it) onto the tortilla.

Add your favorite salsa

Next, add a bit of your favorite salsa to the tortilla. I love the Corn and Chile Salsa from Trader Joe's. It's a little bit sweet and I love the texture and heat. Plus, it looks colorful and tastes so good!

Next, add a bit of cheese. I used Mozarella because it is a mild cheese, and melts well. You could, of course, use cheddar chesse, pepper jack, a fiesta blend, or whatever else you like!


Sprinkle on the chesse and get ready to roll!

Next, tuck in the ends and roll up your tortilla, just like you would a taco or burrito!

Looks good, but we're not done yet.

Next, in a skillet, toss in a small slab of butter and heat it up. Once the butter is melted. gently place your tortilla into the pan. Lay an empty frying pan on top of it to press it into the skillet. After about two minutes, flip the tortilla so the other side can crisp.

Use a skillet on top of the tortilla to press it down.

What you wind up with is a beautifully pressed panini wrap!

You can slice your wrap in half, which is what I like to do, or you can just eat it whole- like a pocket!

Look at this beany, cheesey goodness!

The result is delicious! If you don't like beans, you can do this very same thing with tomato, basil and Mozarella cheese, or maybe Mozarella with roasted red peppers! With the black beans, this is pretty filling and you probably won't need a side of anything with it!

  3. This looks so easy and it looks yummy! I've never seen spinach tortillas but what a great idea, I'll be they are tastier than regular tortillas and obviously are healthier. I'm going to keep an eye out for them!
