This time of year, I seem to be stressing over finding time to do the everyday stuff I need to do- like, um... put a warm meal on the table. We're really trying to cut back on how often we're ordering out, so I am trying to come up with simple, delicious meals for the family. One of the fastest things to make, which I almost always have ingredients on hand for, is a quiche. Everyone in my family likes quiche, so it's win-win for us.
Quiche Lorraine is a classic quiche, which contains onions, bacon or ham and cheese, and it's one of our family's favorite quiche varriations.
You will need:
I refrigerated pie crust
6 Large Eggs
1 Cup shredded cheese of choice
1/2 Cup chopped onion
1/2 Cup chopped bacon or ham
1/4 Cup Heavy Cream or Milk
Salt and Pepper to taste
First step, get the pie crust ready...
Whisk the eggs together in a large mixing bowl. Add milk or cream, and stir. Be careful not to over-beat the eggs.
In the meantime, chop bacon or ham, onion and cheese.
Add the onion, bacon and cheese to the egg mixture, and stir together.
Pour egg mixture into the pie crust.
Place pie pan on a baking sheet, for even baking.
Place into a 350 degree oven for about 40-45 minutes.
Center should be set (non-jiggly) and the top should be golden brown.
Ta-da... yummy, golden brown crust and top!
Let the quiche cool for about 10 minutes before you attempt to slice into it.
Cut into 8 pieces, serve warm and enjoy!
