Crispy Cheese Baked Chicken
Hey, and happy Tuesday! We're back with another recipe for you to add to your family favorites collection. Breaded or coated baked chicken is nothing new. Lot's of us enjoy a crispy coating on our chicken every now and then, but repeating the same old thing can be sort of boring. So, I decided to add a bit of mystery to our chicken dinner a couple of weeks ago.
You Will Need
Boneless Skinless Chicken Breasts or Tenders
1 1/2 Cups of Crushed Cheese Crackers
1/4 Cup Milk
3/4 Cup Shredded Cheddar or Mexican Fiesta Blended Cheese
2 tbsp butter
Step One: Finely crush the cheese crackers in a sealed plastic bag.
Step Two: Cut chicken into strips
Step Three: In prep trays, line up milk, cheese and crushed crackers
Step Four: Dunk chicken strip into the milk
Step Five: Roll chicken into the shredded cheese
Step Six: Roll chicken in crushed cheese crackers
Step Seven: Place covered chicken strips in a lightly coated baking dish- I like to use either an olive oil or canola oil spray, to prevent sticking while baking.
Step Eight: add small pats of butter (ot your preferred spread) to the top of the chicken.
Place the chicken into a preheated 350 degree oven for 25 minutes. The cracker crumbs should be golden colored at the end of the baking time, and all juices from the chicken should run clear. Always make sure to check that chicken is completely cooked through before serving.
Serve with your favorite sides, and enjoy!
We had rice and steamed broccoli with this tasty chicken dish. My husband really enjoyed this cheesy twist on an old baked chicken classic. If you like a little heat to your dish, add a dash of cayenne pepper to the cracker crumbs before coating the chicken. I never know whether or not my husband will agree to having a 'new' dish again, but he specifically asked to have this again this coming week, which I was happy to hear!
