Hello and hope you are having a great Tuesday. Our days are super busy, especially on game night. With B in baseball, we are guaranteed two games a week, which is so much fun, but makes for a late night during the week. We try to preplan our late nights so we aren't picking something up on the way home. The best way for us to have something ready for dinner is a crockpot meal.
This past week we had a late game on Wednesday and I had planned on making crockpot chicken burritos--super simple.
You Will Need
1 pound boneless, skinless, chicken breast (Depending on family size, I only used 1/2 pound)
Can of black beans, drained and rinsed
Package of frozen corn
Jar of Salsa
Packet of Taco Seasoning (or use a mix of your own spices)
Step One: Place the chicken in the bottom of the crockpot (it should be thawed)
Step Two: Place Salsa, Corn, Beans over the Chicken, Sprinkle Seasoning over all
Step Three: Mix all the ingredients together, making sure chicken stays on the bottom
Step Four: Cook on High 3-4 Hours or Low 6-8 Hours
Just before you are ready to serve, shred the chicken and mix thoroughly
I also made up a cup of white rice to make burrito bowls
We had a super yummy dinner, warm and ready to go when we got home.
The kids had cheese rollups, which I ended up adding to my plate too.
This was a super easy recipe that took very little prep time and tasted great.

ReplyDeleteWe enjoyed this yesterday for Father's Day lunch. I was able to cook it all on the high setting while we were in church, and it was ready by the time we got home. It was quite delicious!
