About a year ago, I found the recipe for Baked Oatmeal Casserole on Pinterest. Unfortunately, the link I pinned is no longer working. Since I can't recall the exact recipe and can't find it written down anywhere in my recipe notes, I had to find a similar recipe. Thankfully, I found it on Inspired By Life!
This is a great breakfast idea anytime of the year, but I especially like it for the holidays or anytime you might be having a small gathering of family/friends for breakfast or brunch. I happened to have bananas and strawberries on hand, but I am sure it would taste good with most sweet fruits. I'd like to try it with peaches one day. I'd say this recipe is suited for 6-8 people as our family of 4 had some leftovers. We just popped it in the refrigerator and heated it up in the microwave the next morning (about 45 seconds) and it was just as delicious!

Ingredients
2 cups rolled oats (I used Quaker Quick Oats because that is what I had on hand)
1/3 cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup strawberries (or your fruit of choice)
1 banana, peeled and sliced (or your second fruit of choice)
1/2 cup chocolate chips
2 cups milk
1 large egg
3 tbsp butter, melted
1 tsp vanilla extract
Directions
Preheat oven to 375 degrees. Generously spray a 13x9 glass baking pan with cooking spray.
In a large bowl, mix together oats, sugar, baking powder, cinnamon, salt, half of the chocolate chips, and half the berries.
In another large bowl, mix together milk, egg, butter, and vanilla extract.
Add the oat mixture to the baking dish. Add the remaining chocolate chips and berries. Add the banana slices in a single layer on top.
Pour the milk mixture over the whole thing and shake the pan a bit to make sure all the oats get soaked evenly.
Bake it for 30-40 minutes or until the top is a golden brown and the milk has set.
I've never heard of oatmeal casserole before. The pic looks delicious. I like to make a new recipe for every Christmas morning. I might have to try this one.
