Hey there, everyone! Today, I am sharing a recipe that everyone in my family loves- Easy Cheesy, Mexican Rice. I have been making this at home, to enjoy with my husband, and last night, I made this for my family, while visiting them in NC. It's super quick and easy, has a bit of a kick to it, and is a true crowd pleaser!
You Will Need
2 Cups of Cooked White Rice
8 oz Sour Cream
2 Cups of Cheddar or Mexican Blend Cheese
1 Can Cream of Chicken Soup
1 Cup of Mild Salsa
1 Can of Rotel (Drained)
1 pkg. Mild Taco Seasoning
Directions
Mix together the soup with 1/2 can of water.
Add cooked rice to a 9x13 baking dish.
Add soup mixture over the rice, and mix in with the rice.
Add all of the other ingredients, and mix together.
*Top with extra cheese, if desired.
*Add cooked taco meat (chicken, ground beef) and/or beans to make this side dish into a full meal!
Your finished casserole should look something like this.
Bake at 350 degrees for 30-45 minutes, until bubbly.
Yum! Cheesy rice, and tomatoes!
Serve with tacos, or any of your favorite Mexican fods!
This is a quick, hearty and easy meal that an be adapted to be vegeterian, a full blown meal, an easy side dish that will feed a lot of people, etc. It can be quickly thrown together for a nice meal on a bust night. I find that pre-cooking the rice in a rice cooker is helpful. This is a meal that Cory and I both enjoy! We hope you'll give it a try this week!
