Bloody Mary Grilled Chicken Salad
Ok so I know that its cold out and salads don't always make the greatest meals when its cold, but this one is SO good and SO easy, you've just gotta try it! The best part is, its filling and healthy!
Step 1: Marinade your chicken breasts in Bloody Mary mix. I usually put it in the night before but as long as it sits in the mix for 30 minutes, you'll get good flavor. Plus the acid in the tomato helps tenderize the chicken.
My favorite mix is Zing Zang. Its spicy and amazing!!!! |
Step 2: Grill or bake your chicken, Id suggest baking it because its cold outside, but grilled is the best.
Step 3: Dump your favorite bag of greens in a bowl, feel free to use whatever kind you want. The "salad" part is up to you.
I like to use Romaine |
Step 4: Season your greens with a tiny bit of celery salt.
Be very careful how much you use, celery salt is pretty powerful. |
Step 5: Top greens with cooked chicken, salad crunchies, and green olives!
I love to put these on all my salads! They have seeds, bacon bits, and tons of flavor! |
If you don't like olives, you can always leave them off... Ill eat your share! |
I hope you enjoy this awesome salad! Please let me know if you make any changes to the recipe so I can try them out too! Happy eating!!
Yum! I never thought of marinating chicken in a mixer. What a great idea!
ReplyDeleteOh my gosh Bo its so so so good! I actually came across it by accident! I wanted salads one night but we didn't have anything to marinate the chicken in so I though what the hey and used the Zing Zang. Best idea I've ever had! You could chop up some celery and add it too.
