Mmmmmmm. This is our family's FAVORITE! And not a single one of us even likes green peppers! HA! It is so warm & hearty & delicious!
Ingredients:
1 40oz bottle of Tomato Juice
1 can tomato sauce
2 beef bouillon cubes
1.5-2 pounds of ground beef
1 small onion
1 large green pepper
chili powder
1 package of 90 second microwave white rice
I use about 2 pounds of ground beef for mine. We like it THICK and MEATY!
Prep:
Dice onion (I don't use much of an onion- just enough for a little flavor)
Dice Green Pepper (i make mine very tiny- but if you love peppers- leave them larger)
In a large Soup pot, combine tomato juice, tomato sauce, 2 beef bouillon cubes, 1 tablespoon of chili powder and diced green peppers. Stir everything together, bring to a boil, then reduce to low and simmer for 40 minutes.
In a large skillet, brown meat and diced onion together. Once cooked, drain grease.
Pop the 90 second white rice in the microwave.
Once your 40 minutes of simmering is up, add meat and rice to the large soup pot. Continue to simmer for 15-20 minutes, stirring occasionally.
You are DONE! We love to eat our with grilled cheese sandwiches, or just some oyster crackers... sometimes both! It is a fall/winter favorite sure to warm your insides!!
