I love when the Farmer's Market finally opens!! Aiden and I went this past Saturday and got some yummy, fresh veggies!! I had never tried Kale Chips but heard they were very good so I got a bundle and I'm so glad I did. My friend gave me very simple recipe for them. My only negative is that it didn't make enough from that bundle. I will have to buy more next time. I shared with my kids at school and most of them liked it and asked for seconds.

Kale Chips
Ingredients:
Kale
2 Tablespoons Olive Oil
Seasoning of choice (I just used seasoning salt)
Directions:
Preheat oven to 275 degrees. Fill a large bowl with water and add Kale. Swish around to remove any dirt; drain. Dry thoroughly using a salad spinner or clean kitchen towel. Tear the Kale leaves in 1" - 2" pieces, discarding the ribs, and place in large bowl. Drizzle with olive oil and toss with your hands until evenly coated. Arrange the leaves in a single layer with no overlap on ungreased cookie sheets. Rub each leaf gently between your fingers as you work to ensure each is covered in oil. Sprinkle with salt and pepper or your seasoning. Bake for 18 to 20 minutes or until leaves are crispy.
