Sure, fast food is always an option, but with simple meal planning at the start of the week, you can have a weekly menu that'll help you stick to your grocery budget, and will afford you some quality family time around the dinner table. Smoked Kielbasa Over Rice
Cast of Characters:
1 Large Yellow OR White Onion
Jasmine Rice (for use in a rice cooker)
Favorite BBQ Sauce
Extra Virgin Olive Oil
Salt and Pepper
1. Prepare rice as directed in a rice cooker (If you do not own a rice cooker, you can make rice in your usual way as long as it cooks evenly)
Amazon has a great selection of affordable rice cookers such as this one. I would suggest investing in one so that you can have perfect, easy sticky rice every single time.
2. Slice onion in strips and saute in a skillet with 2 tablespoons of extra virgin olive oil for 10 minutes or until onions become golden brown.
3. Slice kielbasa in 1 inch pieces and add to the skillet along with 2 tablespoons of BBQ sauce, continuing to saute with the onions for an additional 5 minutes.
4. When your rice cooker "dings", it is time to assemble a delicious weeknight dinner!
I would suggest putting the onion and sausage mixture over the rice and enjoy it that way.
If your family does not enjoy onions, you can omit with broccoli or zucchini.
Also, as an alternative to the BBQ sauce, this can be transformed into a Japanese-inspired meal by using teriyaki sauce instead.
