Can you believe it's almost time for the kids to head back to school? We're mostly ready at our house, but there's one aspect of back to school that I tend to struggle with all year long & that is the dreaded lunch box. We usually start the year off strong, but I quickly run out of steam, and my son is left with lackluster meals.
