I love squash and eat it almost daily during the summer. I love it about any way you can cook it and one of my favorites is in a casserole. I can even get Aiden to eat my squash casserole. It's so easy to make and so delicious.
Here is the recipe I use:
4 cups of squash (cleaned and cut)
1 sleeve of crackers (crushed)
1 cup cheddar cheese (grated)
1/2 large chopped onion (I leave this out because we don't like onions)
2 eggs
3/4 cup milk
1/2 cup butter (melted)
Preheat oven to 400. Lightly steam squash and onion in steamer basket for 5 minutes. In medium bowl, combine cracker crumbs,cheese, eggs and milk. In large bowl, add drained squash and onion. Gently fold in 1/2 of the cracker mixture. Melt 1/2 cup butter. Add 1/2 of the butter to the squash mixture. Spread into a 9x13 baking dish. Top with remaining crackers and pour remaining butter over the dish. Bake for 25 minutes or until lightly brown.
