My mom received an Instant Pot for Christmas last year, and I gotta tell ya, I've been a bit jelly ever since. I'm really looking forward to making everything from soups and dinners to yogurt and desserts! I'm going to have a ton of IP recipes to share with you all, but for my tester recipe, I wanted to stick with something simple, which tends to be a go-to recipe and a family favorite for weeknight dinners and family gatherings.

IP Chicken Taco Recipe

You Will Need:

2-3 Boneless, skinless chicken breasts
6 oz Cream Cheese (cubed)
1/4 Water
1 Package Taco Seasoning
1 1/2 Cups Shredded Cheddar Cheese
*Taco Toppings of Choice

Add chicken breasts to the IP.
Sprinkle packet of taco seasonsing over the chicken.
Pour water over the chicken.
Top with cubed cream cheese.

Put the IP on the poultry setting for 25 minutes.
Allow the pressure to release for 10 minutes.

The chicken should be fork tender. Shred with fork and make sure all seasoning and cream cheese is mixed in with the chicken. Add 1 1/2 cups of shredded cheddar cheese and allow to melt in the IP.

Serve as tacos with your favorite toppings.

This recipe couldn't be easier, and the chicken came out more delicious than ever before. If I had made this recipe in my slow cooker, it would have taken 3-4 hours on high. 25 minutes in the IP, friends! That's what I call a supper hero win for mom! Everyone in my family loves this chicken taco recipe. You'd be surprised how far 2-3 chicken breasts go when you're making shredded chicken. This recipe fed 10 people.

I love having the chicken over lettuce as a salad, and it's also great as a topper for nachos. My kids love it baked in tortillas as taquitos, too!

The Instant Pot is the ultimate Christmas gift! Even if you're not a cook, you will love the IP! It has so many cool settings, and there are just so many amazing things you can do in it and with it. I can't wait to wow my family with even more amazing dinners and desserts, and you guys- I can't wait to make my daughter homemade yogurt in the IP! I'm going to come back with more IP tips and recipes as I become more familiar with my 10-in-1 Ultra, so stay tuned for much, much more!
