Crock Pot Meatloaf....The Good And The Bad!

I found another crock pot meal that will go into my dinner rotations.  We love meatloaf, but I don't make it very often.  We had it recently at our Wednesday dinner at church and it is Aiden's favorite.  He asked why I never make it anymore so I promised him I would the next week.  I decided to give it a try in the crock pot so it would be ready when we got home. 
Overall, it was really easy and really good.  We all liked it with mashed potatoes.  What I didn't really like is using the foil so I will skip that step the next time I make it.  I think if I use some olive oil on the crock pot the meatloaf won't stick.  I also didn't like that the outside edges got a little well done. 

The recipe said to line with foil, I won't next time. 

Ingredients ready to be mixed up

Ketchup over the top

Ready to eat

Zesty Meatloaf

1 lb. ground beef or turkey (I use turkey)
2 eggs
2 cups bread crumbs
1/4 cup water or apple juice
1 tsp. dry mustard
2 tsp. salt
1 cup ketchup (divided in half)

Combine all ingredients except 1/2 cup of ketchup.  Shape into loaf and place in crock pot.  Spread remaining ketchup over the top.  Cook on low for 8 hours or high for 4 hours.  

I actually doubled the recipe this time because I wanted extra for lunches and a quick meatloaf sandwich dinner the next evening in between a golf match and swim team practice.  It was the perfect amount.

  1. We like meatloaf too but I have never made it in a crockpot. Some people always use foil in theirs but I never have. I use a little olive or vegetable oil spray on the bottom and the sides and clean up is easy. Thanks for the great idea!
