Last week the girls and I picked up some blueberries at the grocery store. You know what was still sitting, untouched, in the refrigerator come Sunday evening? You guessed it, those darn blueberries! I like blueberries enough, but I'm not one to sit and eat them as a snack or anything. So, I did the first thing that popped into my mind, I baked them into a loaf of bread!
I LOVE homemade bread. I wasn't too sure how I felt about a plain old blueberry bread, so I looked in the cabinets and found that I had some lemon extract on hand and...well, the rest of the story is pretty boring, so I'll just get onto the recipe 😃
You'll Need:
2 Tablespoons lemon juice
1/3 cup butter, softened
1 cup sugar
2 eggs
1 1/2 cups of flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup of milk
1 cup fresh blueberries
1/2 Tablespoon lemon extract
In a large bowl, beat the lemon juice, butter, sugar, and eggs, until well combined.
In a second bowl, combine the flour, baking powder, and salt. Alternate adding a bit of the flour mixture and a bit of the milk to the lemon juice mixture, blending well after each addition.
Once the ingredients form a nice batter fold in the blueberries and lemon extract.
Transfer the completed batter to a greased loaf pan (I used an 8-inch x 4-inch & it worked well) and bake, at 350°, for 1 hour, or until you get satisfactory results from the toothpick test!
This is a bread that could be served up as a special breakfast treat or for dessert. It'd be a nice addition to any Easter, Mother's Day, or Father's Day breakfast/brunch/lunch that you have coming up, too. I hope that you enjoy it!
