For those of us who are watching our carb intake, I put together a delicious recipe that may actually surprise you.
The Green Giant Veggie Spirals are the base of this recipe. I picked up a bag, unsure of what I would do with them. I started to think about some of my favorite dishes that involve "noodles" and my absolute favorite is Pad Thai.
Pad Thai is just one of those dishes that you can't explain. There is something so amazing (when it's done well) that knocks my socks off! This recipe is obviously not going to taste exactly the same, but it really did fulfill that craving for Pad Thai.
Ingredients:
Green Giant Veggie Spirals Butternut Squash
Soy Sauce (liquid aminos is a great alternative)
Real maple syrup
Garlic powder
Salt and pepper
Sesame oil
Vegetable oil
Frozen peas
Salted peanuts
(feel free to add chicken or shrimp!)
I sautéed the frozen spirals in a nonstick skillet with vegetable oil until they became tender. I added different seasonings that I like such as garlic powder, salt, pepper and a dash of all-purpose seasoning. Just add whatever seasonings you prefer to amp up the flavor of these bland "noodles".
Once tender, I added the frozen peas and sautéed for a few minutes. At that point, I added about 3 Tbsp of soy sauce, 3 Tbsp of maple syrup, a teaspoon of sesame oil and let that cook down for a bit longer.
I plated the "noodles" and sprinkled crushed, salted peanuts on top! The peanuts were definitely the kicker for me. That brought it home and gave me the Thai flavor I was wanting.
