Keto Creamy Spinach:
Ingredients:
I make this with premade alfredo sauce and frozen spinach because it gets me from "ingredients" to dinner quicker. But, if you want to make this a little more homemade (read, a tiny bit more work), you can make your own alfredo sauce, which will save you a few carbs too.
Keto Alfredo Sauce:
Ingredients:
This will make a little more alfredo sauce than you need for the spinach (or you can add it all in and make your spinach extra creamy!) You can double this recipe and use it for pasta or Zoodles if you're sticking with the low-carb/keto thing!
I hope you enjoy this quick and easy side! Please comment below if you try it out and tell me how it turns out or any modifications you make to my basic recipe!
Ingredients:
- 1 Box Frozen Chopped Spinach, defrosted
- 1 C Alfredo Sauce
- 1 t Garlic Powder
- 1 t Onion Powder
- 1 T dried onion pieces
- 2 t Pepper
- 1 t Worchester sauce
- ½ C Parmesan
- Preheat oven to 350*F
- Squeeze as much liquid as possible out of the defrosted spinach.
- Mix in alfredo sauce a bit at a time until it looks good (this is really just about how creamy you want your spinach, so play around with this to find your ideal creaminess).
- Mix in spices (again, these are the spices and quantity I like, but trust your own tastes).
- Put into small baking dish (here I used two small corning ware dishes) and top with Parmesan cheese.
- Bake for around 20 minutes, until heated through and cheese on top is melty. (makes approx. 4 serving as side item).
