Happy Tuesday, friends. I know I recently shared a lentil recipe with you all, but these beans are a household staple for us. That has come in really handy over the last couple of weeks because lentils are pretty versatile and we've been able to use them as the main ingredient in a few of our meat-free dinners.
Lentil Sloppy Joes make a great lunch or dinner meal. We served ours with steamed veggies, but you could easily serve them alone or even with some tater tots!
You Will Need:
1 Tablespoon Olive Oil
1 medium onion, diced
1 medium onion, diced
1 medium green bell pepper, chopped
3 1/2 cups of water
1 bag (16 oz.) of brown lentils
1 cup of ketchup
2 Tablespoons light brown sugar
2 teaspoons apple cider vinegar
salt and pepper to taste
Sandwich Buns, Pita Bread, or Your Favorite Sliced Bread
Directions:
Heat the oil in a large pot over medium heat.
Add the onion and pepper and saute for 4-5 minutes, stirring frequently, until veggies are softened.
Add the water to the pot and turn the heat to high to bring to a boil.
Once the water is boiling, add lentils, stir, and reduce the heat to low-medium.
Cook lentils for at least 30 minutes, stirring often until they are tender.
Stir in the ketchup, light brown sugar, apple cider vinegar, and salt and pepper.
Let the ingredients simmer, being sure to stir frequently, for 10 minutes, until thickened.
Serve on your favorite type of bread and enjoy!
Hope you'll give this delicious recipe a try! If you don't have lentils on hand, I highly recommend buying an extra bag or two when you are able to pick them up. They really do come in handy.
