In my efforts to continue social distancing, I realized that we were in need of a few things from the grocery store. I was not thrilled to have to make a trip to the store, but I am very lucky to live across the street from a local chain store. So I decided to very make a quick run to the store, only carry what I needed, and go straight home. I got to the store and made a mad dash to grab my few items, but in the process, I couldn't help but notice how bare the shelves are.
The only meat options available were very expensive cuts of beef, some bacon, sausage, and ham steak. That was it! And I know in other places, meat is non-existent at this point. While stores struggle to keep up with demand, we are faced with a new reality that we may not have meat available to us in our stores. So what does this mean? We are going to have to get creative with meals to feed our families.
One meatless meal that I really enjoy is Teriyaki Stir-Fry. It's so easy to make, and oh-so good! Usually people eat stir-fry with meat, but this one uses broccoli, mushrooms and minute rice as the main ingredients. Now, I did cheat a bit on this recipe and I used Panda Express's Mandarin Teriyaki Sauce, but you can use what ever teriyaki sauce you like, or have on hand. I also added a splash of soy sauce while the broccoli was browning. With all the spices and flavors of this dish, it's sure to be a crowd pleaser.
*Quick Tip-Using steamable broccoli and minute rice will significantly cut down on your cook time.
Ingredients:
- 2 bags of Steamable Frozen Broccoli-cooked
- 1-11.25oz Can of Mushroom Pieces and Stems-drained
- 1/2 tsp of Garlic Powder
- 1/2 tsp of Onion Powder
- 1/4 Tsp of Ground Ginger
- (Salt and Pepper to taste)
- 4 C Cooked Brown Minute Rice (to use as a base for stir-fry)
- 1/2 C of Teriyaki Sauce
Microwave broccoli according to package directions, and set to the side. In a large saute pan, heat 1bsp of oil or butter over medium heat. Add broccoli to pan once it's heated and let the broccoli brown, stirring to turning over frequently to avoid burning. Once brown, add drained mushrooms to the pan and season with garlic, onion, ground ginger, and salt and pepper. Stir to mix all of the ingredients together. Cook for 5 minutes, and stir in the teriyaki sauce. Cook for an additional 5-10 minutes, or until the sauce is reduced. Serve over cooked minute rice and enjoy!
