Are you a biscuit-lover? Thought of as one of the best southern cuisine staples, biscuits are so versatile. Drizzle with honey, cover with jam, or build your own breakfast sandwich (eaten any time during the day) are just a few ways that we can enjoy biscuits. I have to admit- while I love baking, making that from-scratch flaky biscuit just doesn't seem to be my forte. Recently, Big Bottom Market and their biscuit mix entered into my life and I am in love! I was sent three different Big Bottom Market gift-sets to try out, each including the amazing biscuit mix. Considered a "wet"mix, this is easy to make and easy to bake! Grab your bowl, water/milk, and an greased 8X8 pan and off you go!

The Big Bottom Biscuit Cookbook and its list of jams/ spreads immediately jumped out at me! Trying to be more creative and budget-friendly, I've been making a lot more items at home. A great gift for yourself or the kitchen-lover, this cookbook is a definite must-have! The cookbook also has great ideas for sauce uses: try out the Pulled Pork BBQ or create a Charcuterie Board w/ the Mustard.

This biscuit mix and honey is a must-have! I talk about the Biscuit Mix and cookbook recipes below, but I must say, try a spoonful of the honey (or two) you won't be disappointed! It is so sweet and tasty! Honey is such a versatile sweetener- for biscuits, drinks, jams, sweets, and more. Don't forget to use your honey in your hot tea too!

Great coffee is a definite must-have, right? Equator and Big Bottom partnered together this past March to create a unique Big Bottom Blend that I absolutely love! I love good coffee but I also love companies that are committed to sustainable and equitable business and environmental practices. I love that Big Bottom builds partnerships and relationships with businesses that care about the community- both locally and globally.
In 2011, Big Bottom Market, a gourmet deli located in Guerneville (Sonoma Valley) CA, was looking for the product that would make them well known. Looking to establish a good grab-and-go breakfast as well as break free from the latest cupcake craze, Big Bottom turned to the biscuit. Biscuits, when made right, are flaky buttery creatures that are the basis for so much creatively. Soon the "wet" mixture-based biscuit became the base of meals at Big Bottom Market. Popularity and the Sonoma Valley Tourism boom pushed Big Bottom Market to develop and sell their own pre-packaged products alongside local companies. In 2016, Big Bottom Biscuit Mix and Honey were named one of "Oprah's Favorite Things", pushing their recognition farther than Sonoma Valley. After an increase in sales and recognition, Big Bottom decided to publish "The Big Bottom Biscuit: Specialty Biscuits and Spreads from Sonoma's Big Bottom Market."
Met with a lot of fanfare and press, the Big Bottom Biscuit cookbook quickly took off. Recently, author, chef, and business owner Michael Volpatt and I had the chance to talk about all things Big Bottom so I was really excited to dive into the cookbook recipes as well as create my first round of biscuits! The cookbook is chock full of jams, spreads, and biscuit sandwich ideas.
Of course, reader, you are encouraged to make your Big Bottom Biscuit from scratch but you can also use the awesome easy pre-made mix available on Etsy's Big Bottom Market Outpost. Add water or milk to your mix, follow instructions about baking, and finish with wonderful flaky biscuits! Michael suggests you then try the Sea Biscuit and Biscuit BLT recipes for wonderful savory sandwiches. The cookbook also suggests fabulous stews, meat dishes, and even has recipes for using leftover biscuits as pie crusts!
I haven't tried the sandwich biscuits yet, but broke out the ingredients to make two of the cookbook recipes: Strawberry Jam and Red Bell Pepper Jam. Y'all- I am in love with each of these! We have already established I like sweet things, and these definitely were up my alley. I was hesitant about the red bell pepper jam because I didn't want too spicy, but this jam is sweet rather than savory.
I would definitely recommend trying out the various recipes because you never know what you might find that you enjoy! I particularly like how the cookbook gives ideas on how to use leftover biscuits, like making a pie crust, because I understand the importance of using everything that's available!
Michael and I also had the chance to talk about Big Bottom Market retail and life during California Shelter-in-place orders. Retail Expansion developed from biscuit mix/ honey to mustards, jams, and bbq sauce. When Covid-19 hit, the Market decided to close its doors to customers but focus on its online retail business. Booming sales in the biscuit mix, a recent coffee-bean launch, and daily cooking classes on Big Bottom's facebook page have helped the Market's survival until they could reopen their doors. As a result of the daily cooking classes and retail focus, another cookbook has been launched: Cooking in Place: 50 Days, Stories, and 70+ Recipes To Keep You Sane During Challenging Times. Available for pre-order, this e-book will be launched on June 11 and will focus on using Big Bottom recipes to help us be creative in our own kitchens. A portion of each book's proceeds will be donated towards two non-profit organizations in the Sonoma Valley: Food for Thought Food Bank and Becoming Independent.
Big Bottom Market loves giving back to their community as well as building and engaging in partnerships with other local Sonoma businesses. Partnering with local wine, honey, candle, and olive oil companies, Big Bottom continues to build its retail while giving back to the community. One day, I would love an in-person Market visit but for now I'll stick to purchasing available products! I encourage you to do the same, starting with the Big Bottom Biscuit Mix!
