North Carolina has been receiving a bit of winter weather lately. I guess Mother Nature decided she wanted to send us ice, snow, and freezing rain so that we all stop lamenting how hot it was at Christmas!
I know the typical go-to "cold weather" meal is chili, but I've never been much of a fan of certain types of chili. Mulling over what was in my freezer and cabinets, I decided to make Sloppy Joes. Albeit, I had no hamburger buns so I made biscuits (from scratch) to go with!
Since it's just me, I didn't make a whole lot of "joe" meat.. I basically used a pound! I started off Ree Drummond's Recipe found on Food Network then modified with the ingredients I had in the house.
Soy Sauce replaced Worcestershire.
I used real mustard in place of the dry.
The green pepper was left out because I didn't have any- so it was just onion!
As for the biscuits, I'm used to making biscuits, cookies, and cakes from scratch. Typically, I'm not great with white/wheat bread or rolls. If anyone out there in MBP land has tips, I'll gladly take them.
The quintessential southern biscuit uses buttermilk, but y'all- I NEVER have buttermilk in the house. So regular milk it is.
This NYT Recipe was what I used and I absolutely loved them! One addition- I did spread melted butter across the tops before they baked! I do have a collection of biscuit cutters, so I used the medium sized one. It equaled 8 biscuits.
