This is truly the last recipe you'll ever use for gluten-free pumpkin muffins! I made these muffins three days in a row for my family.
We are not a truly gluten-free family but gluten can cause a bit of heartburn for some members of my family so I'm always on the lookout for an amazing recipe to try. These muffins are seriously THAT GOOD. You'll never miss the gluten. Personally, I love King Arthur gluten-free flour that I purchase at Target, so I can't speak to whether or not these muffins will be as incredible if you use other flours. I just know what I know! This recipe is based off of another recipe that I originally tried. I tweaked a few things here and there and have landed on this as the final recipe.
Let me also note, I sometimes add flaxseed meal to my muffins for additional nutrition. That is optional but it makes no difference in taste so it's a great add-in.
