A Different Way to Sweet Potato

 Ah, the glorious sweet potato. As a kid, I never liked em. When I grew up and ended up in the south, I encountered the first sweet potato casserole that I truly loved. 

Now, there are so many variations on casseroles. To Marshmallow, to not marshmallow. to pecan crust, to not. You get my drift.

Have you ever had sweet potato slices? I saw this recipe floating across the social media world lately and thought I would try it!

Sweet Potato Slices With Goat Cheese, Cranberries, and Pecans

  • Now, first up, clean your potatoes, slice em, and season how you desire. Whether that's with your own unique blend, salt + peppa, brown sugar, whatever your heart's desire. PS- I'd slice thicker rather than thinner, or you might end up with sweet potato chips, which are just as yummy!
  • Grab a baking sheet and a liner (or spray) & turn the oven til 375
  • Place your potato rounds flat across the sheet. 
  • Bake for about 10 minutes, flip, and then back the other side for about 10 minutes. 
  • Add your toppings: Goat Cheese, Cranberries, and diced pecans. 

Enjoy this tasty treat! I made this to go with a meatloaf over the weekend, and it was sooo easy! It is a great dinner addition, but also a great appetizer for any upcoming hosting you might be doing! 

Tips

  • goat cheese should be at room temp, otherwise it's hard to spread & drop on your potato. Unless you decide to whip it, like the original recipe calls for. To be honest, I wasn't taking that kind of energy just for myself. For a fancy dinner party, sure thing! 
  • I bought a tiny package of diced pecans and that did the trick too! 
  • You might wish to oil your potatoes, but I actually didn't, and the flavor was still there, so totally up to you!

I will gladly point you to the original recipe on Mia Recipes. I did not whip the goat cheese, I did not really season my potato, but rather used some brown sugar sprinkled across, and I also didn't drizzle with honey because I felt like it was already sweet enough!
