KC Cattle Company (out of Kansas City, MO) has been raising American Waygu beef for over 10 years here. KC sent me a couple cuts of steak to test out: the Waygu Denver Zabuton and Waygu Beef Ribeye. 

The Denver steak is sold individually rather than packaged together. It is cut from the under blade of the chuck roll. There are two grades offered: Classified (BMS 4-7) & Top Secret (BMS 8-11). Read about how KC Cattle Company grades their meat here. 

The Denver Zabuton, pictured above, is a Japanese name referring to "pillow" or the soft and tender texture of the cut. It's usually cooked rare or medium-rare. I have a tendency to like my steaks not bloody, so that may show up in the above photo. 

Regardless, slicing into this steak resulted in a smooth cut (although I need new steak knives) that allowed the most melt- in-the-mouth tender texture. I am not a steak snob, but this is definitely up there with anything I've had in restaurants in recent years. 

I sliced it, just to make it easier to feature to you, and to eat as well. I've had those moments of trying to cut the steak and everything slides off the plate, so I was trying to avoid that mess! This sliced steak would be great on kabobs too.

For a different cut, consider the rib eye. While this is in my freezer for a different day, or perhaps Valentine's Day itself, if it's anything like the Denver Zabuton, it will have a great taste too! 

The Waygu Beef Ribeye has a few different ounce selections: 16-23 ounce or 24+, plus the ribeye is also available boneless. The Rib eye is 100% natural, hand cut, and is about 1.5 inch thick. This is certainly one that's for special occasions and celebrations, as it's a special cut. It's a versatile cut that can be cooked in a myriad of ways, from the grill to pan-searing.

What is Waygu?

Waygu is a style of beef comes from raising Japanese cattle. Here in the US since 1975, American Waygu combines Japanese cattle with other breeds, like Angus or Hereford. The result is a wonderful selection of beef, crafted with honesty and transparency about the way animals are treated on farms. 

There are specific ways of processing that allows special marbling (or distribution of fat) to affect taste, flavor, tenderness, and juiciness. Waygu has what we call an umami flavor, which results in a special savory effect on your beef. 

It's not quite salty, but is earthy. Whatever you want to label it, it's a wonderful tasty flavor that is different compared to regular cuts as it has a different fat content and texture. Waygu steaks aren't as large as regular steaks because of those reasons, too.
